Ingredients

  1. Mutton leg 1
  2. Papaya paste 3 tbsp
  3. Vinegar 4 tbsp
  4. Lemon juice 1 tbsp
  5. Lemon skin ½ tsp
  6. Oil 3 tbsp
  7. Mint leaves ¼ bunch
  8. Ginger garlic paste 2 tbsp
  9. Brown sugar 1 tbsp
  10. Salt to taste
  11. Black pepper powder ½ tsp
  12. Chili powder 1 tbsp
  13. Worchester sauce 2 tbsp

Method

  • 1. Debone the whole chicken leg piece, do not remove the bone completely and remain it attached with the meat.
  • 2. Open the whole piece into book form.
  • 3. Marinate mutton leg piece with 2 tbsp ginger garlic paste and 3 tbsp papaya paste.
  • 4. Now rub mutton with salt, black pepper, lemon juice, lemon skin, Worchester sauce, fruit vinegar and oil.
  • 5. Lastly sprinkle with mint leaves, chili powder and brown sugar. Rub all the marinade very well.
  • 6. Now wrap mutton with aluminum foil, fit in a grilling stand and cook over burning charcoal from both sides.
