- 8 table spoons (tbl sp) cumin seeds (sabat/safaid zeera)
- 4 tbl sp whole black peppers (sabat kali mirch)
- 1 tbl sp cinnamon (daar chini)
- 1tbl sp cloves (laung)
- 1/2 tbl sp black cardamom (sabat kali/baRi ilaichi)
- for garam masala correct ratio of these spices is very important.
Method
- Grind every thing in a very fine powder, if grinder is not strong then break the cinnamon and cardamom in small fragments and then grind.
- Leave it in a flat dish for 1/2 hr so heat generated while grinding is released, if you will put it in an air tight jar immediately it will spoil.
- Once cooled down put in air tight jar, it will stay good for 3-4 month.
