Ingredients

  1. 1) Liver (kaleji), cut into cubes 250 g
  2. 2) Ginger (adrak) paste 1 tbsp
  3. 3) Garlic (tasari) paste 1 tsp
  4. 4) Onion paste 1 tsp
  5. 5) Yoghurt (dahi) 2 tbsp
  6. 6) Red chilli powder 1/2 tsp
  7. 7) Garam masala 1/2 tsp
  8. 8) Cumin (jeera) powder 1/2 tsp
  9. 9) Green coriander (chopped) 2 tsp
  10. 10) Turmeric (haldi) powder 1/2 tsp
  11. 11) Carom (ajwain) seeds 1/2 tsp
  12. 12) Dry fenugreek (powder) 1 tsp
  13. 13) Salt to taste
  14. 14) Vegetable oil 1 tbsp
  15. 15) Vegetable oil for basting

Method

  • 1.Rub ginger, garlic, and onion pastes on the liver cubes and set aside for an hour
  • 2. Mix the remaining ingredients (except oil / butter for basting) with the yoghurt and coat the liver cubes.
  • 3. Leave to marinate for at least 2 hours.
  • 4. Preheat oven to 150°C (300°F).
  • 5. Thread the cubes gently onto the skewers.
  • 6. Roast / grill / bake till half done (10 minutes).
  • 7. Drain the excess marinade, baste once and roast again for 4 – 5 minutes till cooked through.
  • 8. Serve at once, accompanied by salad.
